Parmesan Topped Stuffed Potato - cooking recipe
Ingredients

2 tsp. margarine
2 Tbsp. minced shallots or onion
1 baked potato, cut in half lengthwise
1/2 c. cooked fresh or frozen broccoli, pureed
1/4 c. plain low-fat yogurt
2 tsp. grated Parmesan cheese
dash of salt and pepper
Preparation

In small nonstick skillet, heat margarine until bubbly and hot; add shallots (or onion) and saute briefly, about 1 minute.
Remove from heat and set aside.
Preheat oven to 400\u00b0.
Scoop pulp from potato halves into small bowl, reserving shells; add sauteed shallots (or onion), broccoli, yogurt, salt and pepper; mash until thoroughly blended.
Divide mixture into reserved shells and sprinkle each with one teaspoon cheese.
Bake until lightly browned, 20 to 25 minutes.
