Chicken Casserole - cooking recipe

Ingredients
    8 oz. dried apricots
    2 Tbsp. oil
    1 oz. butter
    4 chicken portions
    1 onion (chopped)
    2 Tbsp. all purpose flour
    1 bouquet garni
Preparation
    Soak apricots in cold water about 4 hours.
    Drain, reserve water and up to 1 pint.
    Heat oil and butter in pan and fry chicken on both sides.
    Transfer to casserole dish.
    Fry onions about 3 minutes, turn down heat and stir in flour.
    Add apricot liquid stirring to a boil.
    Add remaining ingredients. Pour sauce over chicken, cover and cook at 350 degrees for 1 hour.
    Remove garni before serving.
    Serves 4.
