Applesauce Diabetic Cake - cooking recipe
Ingredients

2 1/2 c. water
2 1/2 c. raisins
2 c. unsweetened applesauce
3 eggs
2 tsp. liquid sweetener
1/2 c. nuts (optional)
1 1/2 c. cooking oil
3 c. self-rising flour
1 tsp. cinnamon
1/4 tsp. soda
2 tsp. vanilla
Preparation

Cook raisins in water until all water is absorbed, add applesauce, sweetener, oil and eggs and mix well.
Sift dry ingredients and add to other ingredients.
Add flavoring.
Put in greased and floured pan and bake 30 to 35 minutes at 350\u00b0 until cake is done.
If you use a Bundt pan it takes 45 to 55 minutes.
