Cheese Soup - cooking recipe

Ingredients
    1/2 stick butter
    3 green onions, chopped
    3 stocks celery, chopped with some leaves
    2 carrots, grated
    2 cans chicken broth
    3 cans cream of potato soup
    16 oz. yellow sharp Cheddar cheese, grated
    chopped parsley
    8 oz. sour cream
    3 Tbsp. sherry
Preparation
    Saute onion, celery and carrots.
    Add the chicken broth. Cover and simmer for 30 minutes.
    Add potato soup, cheese, parsley, sour cream and sherry.
    Simmer for 15 minutes.
