Cajun Soup - cooking recipe
Ingredients

2 qt. tomato juice and 1 large can tomatoes or 2 qt. home canned tomatoes
1 c. onions, chopped
1/2 c. bell peppers, chopped
1 c. carrots, chopped
1 c. okra, chopped
2 c. cabbage, chopped
1 c. corn
1 lb. Polish sausage, chopped in quarters
1 tsp. cumin
1/2 tsp. dried red pepper
1 tsp. sugar
salt and pepper to taste
water (to add liquid, if needed)
Preparation

In a large Dutch oven or soup pot over high heat, cook sausage, onions and bell peppers.
Add tomato juice, tomatoes, remaining vegetables and ingredients.
Stir frequently.
Cover and reduce heat to medium-low, then low, allowing to cook for an hour or longer.
