Venison Meat Balls - cooking recipe

Ingredients
    2 lb. ground venison
    2 eggs
    2 1/2 tsp. salt
    3 Tbsp. parsley
    4 Tbsp. Parmesan cheese or Romano
    1 tsp. nutmeg (optional)
    3 slices sourdough bread
    1 c. bread crumbs (to roll meat in)
Preparation
    Put meat, cheese, seasoning and eggs in a bowl. Wet the slices of bread, squeeze dry and shred into bowl.
    Mix ingredients. Form into meat balls. Roll in bread crumbs.
    Cook in oil until browned. Drop meat balls in boiling pasta sauce. Simmer about 10 minutes. Serve over rice or pasta.
