Pineapple Slaw - cooking recipe

Ingredients
    1 (8 oz.) carton pineapple or vanilla low-fat yogurt
    3 Tbsp. reduced calorie mayonnaise
    1/2 tsp. lemon juice
    5 c. thinly sliced green cabbage
    1 (8 oz.) can pineapple tidbits in juice, drained
    fresh pineapple wedges (optional)
Preparation
    Stir yogurt; spoon onto several layers of heavy-duty paper towels and spread to 1/2-inch thickness.
    Cover with paper towels; let stand 5 minutes.
    Scrape into a bowl, using a rubber spatula; stir in mayonnaise and lemon juice.
    Combine cabbage and pineapple in a bowl; toss well.
    Add yogurt mixture, tossing gently to coat. Cover and chill.
    Garnish with pineapple, if desired.
    Yield:
    4 (1 cup) servings.
