Chicken With Pear-Cream Sauce - cooking recipe

Ingredients
    1 qt. chicken stock
    4 ripe pears
    4 boneless, skinless chicken breasts, cut into 8 halves
    salt
    freshly ground pepper
    2 c. heavy cream
    juice of 1 lemon
    2 heads endive, cored and coarsely chopped
Preparation
    Pour chicken stock into saucepan and bring to a simmer.
    Peel pears, save parings and cut pears into uniform pieces.
    Add to chicken stock and cook until tender (5 to 10 minutes).
    Drain pears and reserve stock.
    Puree pears in blender or food processor.
