Enchiladas Con Pollo - cooking recipe

Ingredients
    8 corn tortillas
    2 tbsp. oil
    sauce, warmed
    filling
    cheese
    sour cream (optional)
Preparation
    Heat oil in skillet and fry tortilla for a few seconds. Remove tortilla and dip in sauce. Set in baking dish and fill with about 1/4 c. filling. Roll and place with opening faced
    down. When all the tortillas are filled, cover with remaining sauce. Bake at 350 until bubbly (about 20 min.). Top with additional cheese the last 10 min. Serve with sour cream if desired.
