Pepper Salad - cooking recipe

Ingredients
    6 large sweet peppers
    salt and pepper to taste
    1/4 c. olive oil
    1 medium onion, coarsely chopped
    3 Tbsp. vinegar (more if desired)
    oregano
Preparation
    Bake peppers in hot (450\u00b0) oven for about 20 minutes, or until wilted and soft.
    Remove seeds and outer skin.
    Cut in pieces; place in a bowl.
    Add onion, salt and pepper.
    Mix vinegar and olive oil; add to peppers.
    Sprinkle with oregano.
    Adjust seasonings, if necessary.
    Serve as an appetizer, or just with fresh Italian bread.
    Serves 12.
