Vegetarian Tagine - cooking recipe

Ingredients
    2 carrots
    2 sweet potatoes
    1 eggplant
    1 artichoke
    1 bell pepper
    1 tomato
    2 stems parsley
    2 stems cilantro
    1 Tbsp. paprika
    3 cloves garlic
    1/2 onion
    1/2 tsp. black pepper
    1/2 tsp. cumin
    1/4 c. olive oil
    1/2 c. water
Preparation
    Peel and cube all vegetables into 1 inch squares.
    Cut onion and garlic into small dices.
    Add spices and salt to taste.
    Warm oil.
    Saute onion and garlic in oil; add vegetables, spices and water.
    Turn heat to medium-hot.
    Cover and simmer for 45 minutes. Serve with lemons, olives and mushrooms.
