Grilled Lobster Tails(Aragosta Coda Alla Griglia) - cooking recipe

Ingredients
    4 (10 oz.) lobster tails
    1/2 c. butter
    1 clove garlic, minced
    3 Tbsp. lemon juice
    1 tsp. parsley, minced
    salt and pepper to taste
    1 Tbsp. chives, chopped
    lemon wedges
Preparation
    Preheat
    grill.
    Cut
    lobster
    along
    edges
    of
    tail undershells with scissors.
    Clip
    off
    fins
    on
    outer
    edges. Peel back and discard
    soft
    undershell.
    Bend tail backwards, cracking joints to prevent
    curling.
    In saucepan mix together butter, garlic, lemon juice, parsley, salt, pepper and chives; saute for 1 to 2
    minutes.
    Brush
    lobster
    tails
    with butter mixture.
    Grease rack and
    place lobsters, shell side down, on hot grill.
    Cover tail with foil and grill for 5 to 7 minutes. Brush again with butter
    sauce
    and
    turn
    lobster.
    Cover and cook an additional 3 to 5 minutes, until lobster turns opaque. Serve with remaining sauce.
    Garnish
    with
    lemon
    wedges
    and serve with drawn butter, if desired.
    Makes 4 servings.
