1 c. milk
2 tsp. baking powder
2 Tbsp. canola oil
1/4 c. brown sugar
1/2 tsp. salt
1/4 c. carob powder
2 eggs or egg substitute, slightly beaten
1 1/2 c. mashed ripe bananas (about 3)
1 c. chopped pecans or 1 c. wheat germ
Preparation

Preheat oven to 425\u00b0.
Line 12 medium muffin cups with paper baking cups or spray bottoms only with vegetable oil cooking spray.
