Portuguese Bean Soup - cooking recipe

Ingredients
    2 c. dried kidney beans
    2 qt. boiling water
    1/2 lb. hot Portuguese sausage or linguica
    1 ham hock
    1 large onion, diced
    2 potatoes, diced or 1 c. macaroni
    1 head cabbage, chopped
    1 small can diced tomatoes
    1 (8 oz.) can tomato sauce
    2 qt. water
    1 c. beef broth
    1/2 tsp. thyme
    1/2 tsp. cumin
    1/2 tsp. oregano
    1/2 tsp. basil
    garlic salt, salt and pepper
Preparation
    Wash beans and put in a large Dutch oven.
    Cover with boiling water and let stand 1 hour.
    Cut sausage into 1/4-inch slices. Add with onion to the undrained beans.
    Cook for one hour over low heat until beans are tender.
    Add other ingredients.
    Simmer 1 1/2 hours, adding more water, if needed.
