Fried Eggplant - cooking recipe

Ingredients
    1 large or 2 medium size eggplants
    1 c. oil
Preparation
    Peel eggplant and cut into 1/4-inch slices.
    Sprinkle eggplant with salt and set aside for 10 minutes to remove bitter juice. When ready to fry the eggplant, squeeze the liquid from it or press it between paper towels to dry.
    Fry in oil until brown. May be combined with laban.
    Excellent in a sandwich with sliced tomato and onion.
