Chicken And Rice - cooking recipe

Ingredients
    3 1/4 lb. chicken
    1 large onion, sliced
    2 Tbsp. margarine
    salt and pepper to taste
    1 c. uncooked rice
    1 red pepper, chopped
Preparation
    Cook onion in one tablespoon of margarine with garlic (to taste) and salt and pepper for 15 minutes in casserole pot.
    Add 3 cups of water, 1 tablespoon of margarine and 1 teaspoon salt. Cover the casserole and cook for 5 minutes, then add rice, chicken (cut up in size pieces that you like) and red (bell) pepper and cover and cook 20 minutes.
    Serves 6.
