Carrot Cake(Without Grated Carrots) - cooking recipe
Ingredients

4 eggs
2 c. sugar
12 oz. strained baby carrots (either 2 (6 oz.) jars or 3 (4 oz.) jars)
1 (20 oz.) can crushed pineapple, drained
1/2 c. oil
2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
2 c. sifted flour
1 c. chopped nuts
1 c. raisins or chopped dates
Preparation

Sift flour, soda, salt and cinnamon together.
Cream eggs, sugar, carrots and oil until smooth and creamy; add vanilla. Gradually add flour mixture, then nuts, raisins and pineapple. Bake in greased tube pan or 9 x 13-inch pan for approximately 1 hour or until golden brown.
