Poached Chicken In White Wine - cooking recipe

Ingredients
    2 Tbsp. butter
    2 whole chicken breasts, skinned, boned and split into 2
    1/2 c. dry white wine
    1 Tbsp. chopped fresh parsley
    6 large fresh oyster mushrooms, cleaned and cut in half
    1/2 seedless cucumber, seeded and sliced thick
    1 c. chicken stock, heated
    1 Tbsp. cornstarch
    2 Tbsp. cold water
    salt and pepper
Preparation
    Melt butter in large skillet over low heat.
    Add chicken, wine and parsley; season well.
    Cover and cook 10 minutes.
    Turn chicken over.
    Add mushrooms and cucumber; season again.
    Cover and continue cooking 6 to 7 minutes.
