Lemon Potatoes - cooking recipe
Ingredients

24 small new potatoes
1/2 c. margarine
1/2 c. sugar
1 Tbsp. lemon juice
2 Tbsp. water
lemon rind
Preparation

Cook potatoes in skins in salted water until tender (about 25 minutes).
Drain, cool and peel.
Combine margarine, sugar and lemon juice in large skillet.
Heat slowly, stirring constantly, until bubbly.
Add potatoes.
Heat slowly, spooning syrup over potatoes until glazed.
Stir in water; cover.
Heat 5 minutes longer.
Spoon into heated serving bowl; sprinkle rind on top. Makes 8 servings.
