Crustless Asparagus Quiche - cooking recipe
Ingredients

2 tsp. margarine, divided
1/4 c. chopped scallions
1 c. cooked chopped asparagus
1 1/2 c. evaporated skim milk
2 eggs, beaten
2 oz. shredded Swiss cheese, divided
1/4 tsp. pepper
dash of each: salt and ground red pepper
Preparation

Preheat oven to 375\u00b0.
Saute scallions until soft in 1 teaspoon margarine.
Combine scallions, asparagus, milk, eggs, 1 ounce cheese and seasonings.
Butter a 7-inch pie dish with remaining margarine; pour in egg mixture.
Sprinkle with remaining cheese.
Bake for 35 minutes, until knife inserted comes out clean.
