Gumbo - cooking recipe

Ingredients
    1/4 c. vegetable oil
    3/8 c. flour
    3/4 c. chopped onion
    1/3 c. chopped celery
    1/3 c. chopped green pepper
    2 garlic cloves, minced
    2 - 3 c. chicken stock or water
    2 bay leaves
    2 - 2 1/2 tsp. creole seasoning
    1/8 tsp. thyme
    2 tsp. worcestershire
    8 oz. frozen okra
    parsley to taste
    chicken pieces & smoked sausage chunks
    shrimp optional
Preparation
    In large stock pot heat oil.
    Add flour.
    Cook and stir on med. heat until mixture is the color of peanut butter and has a nutty aroma.
    Be sure to stir constantly or it will burn.
    Add onion, celery, green pepper, and garlic and saute 1-2 minutes. Slowly add chicken stock or water.
    Stir until combined.
    Add okra and seasonings.
    Simmer on low 1 - 1 1/2 hours.
    Add meat the last 30 minutes.
    Serve in a bowl over rice.
    Top with tabasco or other hot sauce if desired.
    Serves 4-5.
