6 medium beets
1 Tbsp. softened butter or oleo
salt
freshly ground pepper
Preparation

Trim beets, leaving some stalk intact (so they won't bleed). Place in baking dish with a little water on the bottom or wrap in foil.
Bake in preheated 400\u00b0 oven for about 50 minutes (a little longer for foil wrapped beets), until tender.
Pierce with fork to check tenderness.
When cool enough to handle, remove the skins; coat with butter and salt and pepper to taste.
