Apricotlets(Candy) - cooking recipe

Ingredients
    1 c. dried apricots
    3/4 c. water
    2 Tbsp. gelatin
    2 c. sugar
    1 c. chopped nuts
    1 tsp. vanilla
Preparation
    Cook apricots and water; mash and cool.
    Measure 1 1/4 cups. Soak gelatin in cooled apricots.
    Add sugar and heat in double boiler.
    After heating thoroughly, transfer pan with apricots to a low flame and bring to a boil.
    Cook for 5 minutes, stirring constantly.
    Remove from heat.
    Add nuts and vanilla; cool.
    Pour into an 8 x 8-inch pan lined with Saran Wrap and coat with white Karo syrup.
    Cover and refrigerate for 3 days.
    Cut into cubes. Roll in cornstarch, then powdered sugar.
    May use applesauce in place of apricots.
