Herbed Grilled Chicken With Lemon-Thyme Butter - cooking recipe
Ingredients

2 small (2 lb. each) chickens or 1 (3 1/2 lb.) chicken
1/4 c. olive oil
2 Tbsp. chopped parsley
1 Tbsp. chopped thyme or 1 tsp. dried thyme
1 tsp. salt
1/2 tsp. ground pepper
3 Tbsp. butter
1 Tbsp. chopped fresh thyme
1/2 tsp. grated lemon peel
1 Tbsp. lemon juice
1/4 tsp. salt
1/4 tsp. freshly ground pepper
Preparation

Toss chicken with oil, parsley and thyme in large bowl (can be made ahead).
Cover and refrigerate up to 24 hours.
Remove 30 minutes before grilling.
Sprinkle chicken with salt and pepper. Grill approximately 45 minutes, turning occasionally.
