Little Cheesecakes - cooking recipe

Ingredients
    2 (8 oz.) pkg. softened cream cheese
    3/4 c. sugar
    1 Tbsp. lemon juice
    2 eggs
    1 tsp. vanilla
    small size vanilla wafers
    canned pie filling
Preparation
    Combine cream cheese, sugar, lemon juice, eggs and vanilla in large mixing bowl.
    Beat at high speed with hand mixer for 5 minutes.
    Line small (1/2-inch in diameter) cupcake pans with paper liners.
    Put one vanilla wafer in bottom of each liner with flat side down.
    Put 1 tablespoon cheesecake mixture into each cup.
    Bake in a 350\u00b0 oven for 15 minutes or until the cracks appear on top of each cake.
    Remove from oven and let cool.
    They will appear to fall.
    Drop 1 teaspoon of your choice of pie filling onto top of each cheesecake.
