Shrimp And Sausage Jambalaya - cooking recipe

Ingredients
    1 lg. onion, chopped
    1 bell pepper, chopped
    1 c. celery, chopped
    1 can chicken broth
    1 - 28 oz. can whole tomatoes
    1 1/2 tsp. Cajun seasoning
    1/4 tsp. cayenne pepper
    1/2 tsp. salt
    1/2 tsp. garlic powder
    1 lb. smoked sausage
    1 lb. shrimp, peeled
    2 c. cooked rice
    2 Tbsp. vegetable oil
Preparation
    Cut sausage into 1/2 inch slices.
    Heat oil in Dutch oven and brown sausage.
    Remove.
    Add onion, bell pepper, and celery.
    Cook, stirring occasionally, until softened.
    Add broth and spices.
    Lift tomatoes out of juice (reserving juice), break tomatoes up with a spoon, and add to pan.
    Add about half the juice.
    Bring to a boil. Add sausage.
    Reduce heat and simmer about 30 minutes.
    Add shrimp and cook through (3 to 5 minutes).
    Serve over rice.
    (Use remainder of tomato juice if more liquid is needed.
    Adjust spices to taste.)
