Ingredients

1 c. skim milk
1 Tbsp. quick-cooking tapioca
1/4 tsp. vanilla
liquid artificial sweetener to taste
Preparation

Mix tapioca and milk in top of a double boiler.
Heat, stirring constantly, until milk comes to a boil.
(Do not let boil.)
Remove from heat and add vanilla and sweetener.
Chill and serve.
Yield:
1 serving.
Carbohydrate 19 g, protein 8 g, fat 1 g, calories 198.
One serving = 1/2 bread starch exchange, 1 cup whole milk exchange.
