Breakfast Cups - cooking recipe
Ingredients

3 c. cooked rice
1 c. shredded cheese
4 oz. diced green chilies (optional)
1/3 c. skim milk
2 eggs, beaten
1/2 tsp. salt
1/2 tsp. pepper
1/2 lb. cooked sausage
Preparation

Combine rice, 1/2 cup cheese, sausage, chilies, milk, eggs, salt and pepper in large bowl.
Evenly divide mixture into 12 muffin cups, coated with cooking spray.
Sprinkle rest of cheese over filled cups and bake at 400\u00b0 for 15 minutes.
May be frozen and reheated in the microwave.
