Chicken Cacciatore - cooking recipe

Ingredients
    1 (3 lb.) broiler chicken, cut up
    1/4 c. flour
    2 Tbsp. olive oil
    2 Tbsp. margarine
    1 large onion
    2 celery stalks
    1 large green pepper
    1 tsp. dried oregano
    1 tsp. dried basil
    salt and pepper to taste
    1/2 lb. mushrooms, sliced
    28 oz. tomatoes (reserve juice)
    1 (8 oz.) tomato sauce
    1 (6 oz.) tomato paste
    1 c. red wine or water
    1 tsp. dried thyme
    1 tsp. dried rosemary
    3 garlic cloves, minced
Preparation
    Serve on cooked pasta sprinkled with Parmesan cheese.
    Dust chicken with flour in a large skillet; heat oil and butter on medium-high.
    Brown chicken; remove chicken and add fresh vegetables to skillet (celery, sliced diagonally; pepper, sliced into strips and onion, chopped).
    Cook and stir 5 minutes.
    Stir in remaining ingredients; simmer 30 minutes.
    Return chicken to skillet; simmer, covered, for 1 hour until the chicken is tender. Serves 4 to 6.
