Veal Forestier - cooking recipe

Ingredients
    1 lb. veal
    1/4 c. flour
    4 Tbsp. margarine
    1/2 lb. mushrooms
    1/2 c. dry vermouth
    2 Tbsp. water
    dash salt and pepper
    1 Tbsp. parsley
Preparation
    Cut veal into 2-inch pieces.
    Coat with flour.
    In skillet on medium heat in margarine, cook meat until light brown (2 minutes). Remove meat.
    Add more margarine, mushrooms, vermouth, water, salt and pepper and parsley.
    Cover and simmer 5 minutes until mushrooms are tender.
    Return meat to skillet.
    Heat through. Serve with rice.
    Serves 4.
