Kale Soup - cooking recipe

Ingredients
    1 c. pea beans
    1 large, sliced onion
    1 lb. hot sausage pepperoni
    1 lb. kale
    1 Tbsp. salt
    1/2 tsp. pepper
    1 Tbsp. vinegar
    2 c. cubed potatoes
    11 c. water
Preparation
    Soak beans in cold water overnight; drain.
    Add onion, pepperoni, kale, salt, pepper, vinegar and 10 cups of water. Bring to a boil, then reduce the heat and simmer for 2 to 3 hours. Add potatoes and 1 cup water and cook until potatoes are done.
