    1/4 lb. mushrooms, thinly sliced
    1 1/2 c. spinach leaves, torn into small pieces
    2 Tbsp. plus 1 tsp. all-purpose flour, divided
    1 c. milk, divided
    1/2 c. Ricotta cheese
    1 Tbsp. dry sherry
    salt
    pepper
    1 Tbsp. chopped fresh chervil
    1 egg yolk
    2 Tbsp. sour cream
    additional chopped fresh chervil (optional)
