Wiener Schnitzel - cooking recipe

Ingredients
    1 lb. veal or pork chops, sliced thin (lean)
    2 eggs, beaten
    1 to 2 c. bread crumbs (plain bread crumbs work the best)
    salt
    flour
    vegetable oil
Preparation
    Tenderize meat with appropriate utensil.
    (It is necessary to \"flatten\" the meat so that it may be thin enough to cook completely and not become \"soggy\" when placed in the oil.)
    Rub salt onto meat.
    Coat meat with flour.
    Dip meat into eggs.
    Press meat into bread crumbs, coating both sides.
    Preheat oil in skillet on medium heat.
    Place meat in preheated oil, medium heat, until golden brown on both sides.
    Serves 4. Best served with mashed potatoes or noodles and red cabbage salad.
