Rice And Artichoke Salad - cooking recipe

Ingredients
    1 green pepper, chopped
    2 pkg. chicken Rice-A-Roni
    6 chopped green scallions
    2 jars artichokes in marinara sauce, drained
    1/4 tsp. curry powder
    1 c. mayonnaise
Preparation
    Cook rice; omit browning.
    Cool.
    Combine remaining ingredients and add to rice.
    Serve on a bed of lettuce as a luncheon entree or as a side dish.
