Ingredients

2 c. plain flour
2 1/2 tsp. soda
2 tsp. cinnamon
salt (dash)
1 c. oil
2 c. sugar
3 eggs
1 medium size can crushed pineapple (juice and all)
1 1/3 c. grated carrots
1 can coconut
Preparation

Mix flour, soda, cinnamon and salt; set aside.
Beat oil, sugar and eggs for 2 minutes.
Add flour mixture and beat 2 minutes.
Add pineapple, carrots and coconut.
Beat until well blended.
Bake in 13 x 9-inch pan at 350\u00b0 for 50 minutes.
