Ingredients

2 pkg. active dry yeast
pinch of sugar
1 1/4 c. lukewarm water (110~ to 115~)
3 1/2 c. unbleached flour
1 1/2 tsp. salt
1/4 c. plus 1 Tbsp. olive oil
Preparation

Stir yeast and sugar into 1/4 cup lukewarm water.
Set in a warm place until yeast bubbles and doubles in volume, about 10 minutes.
Stir together flour and salt in a large mixing bowl. Make a well in the center of the dry ingredients and pour in yeast mixture, 1 cup lukewarm water and 1/4 cup of the olive oil.
Mix until a rough ball forms.
Turn dough out onto a floured surface and knead for about 10 minutes or until dough is elastic and shiny. Grease the inside of a ceramic bowl with the remaining 1 tablespoon olive oil.
Place dough in bowl, turning once to oil all sides. Cover with a cloth and let rise in a warm place for 1 to 1 1/2 hours or until dough has doubled in bulk.
