Crusty Crab Burgers With Red Pepper Slaw - cooking recipe

1 lb. cooked crabmeat, picked over to remove any shell or cartilage
2 large scallions, minced
2 tsp. grainy mustard
1/4 c. mayonnaise
1/4 tsp. hot pepper sauce
1/4 tsp. cayenne pepper
salt and freshly ground black pepper
1 1/2 c. fresh bread crumbs
1 egg
1 Tbsp. vegetable oil
4 Tbsp. unsalted butter
4 soft sesame seed hamburger buns
Red Pepper Slaw
Preparation

In a medium bowl, combine the crabmeat, scallions, mustard, mayonnaise, hot pepper sauce, cayenne and salt and pepper to taste.
Mix well. Gently fold in 1/2 cup of the bread crumbs. Form the mixture into 4 patties. Refrigerate for about 10 minutes to set.
