Spanish Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    1 egg, beaten
    1 1/2 c. tomatoes (canned)
    2 Tbsp. melted butter
    1 c. bread crumbs
    1/2 c. buttered bread crumbs
    1 small onion, chopped
    1/2 c. grated cheese
Preparation
    Heat oven to 375\u00b0.
    Cut eggplant in cubes.
    Boil 8 minutes in salted water.
    Drain.
    As you add the tomatoes and egg, also add the onion, bread crumbs and butter.
    Place in 1 1/2-quart casserole dish.
    Top with buttered bread crumbs and grated cheese.
