Basic Roux - cooking recipe

Ingredients
    1 part oil (shortening), bacon drippings, olive oil, lard or combination of these
    2 parts all-purpose flour (3 parts if a thick roux is desired)
Preparation
    Mix flour and oil in heavy pot.
    Cook on medium heat slowly, stirring constantly.
    The way I make roux takes no less than 30 minutes and up to 45 minutes.
    Cook until color of dark chocolate. After you get color desired, add chopped vegetables, ie: onion, celery and bell pepper.
    When onions cook clear, add cold water or stock.
