Ingredients

6 c. milk (skim or fat-free)
1 large can evaporated milk or skim evaporated
2 1/2 c. water
1 c. regular rice
4 large eggs
1 c. sugar
1 tsp. vanilla
Preparation

Simply bring milk, water and rice to a boil.
Boil for 40 or 50 minutes (less if recipe is cut in half) or until rice is done and mixture is thick and creamy.
Stir often.
In a large bowl, beat eggs, sugar and vanilla until very frothy.
Add rice mixture slowly to egg mixture and fold.
Chill.
