Ingredients

2 eggs
1 Tbsp. water
1/2 c. + 2 Tbsp. all-purpose flour
2 medium zucchini, cut into 1-inch slices
peanut oil
salt and pepper to taste
Preparation

Combine eggs and water; beat well.
Add flour and beat until smooth.
Dip zucchini in batter and deep fry in hot oil (375\u00b0) until golden brown.
Drain on paper towels; sprinkle with salt. Serve immediately.
