Candied Tomatoes - cooking recipe

6 large tomatoes
1/4 c. olive oil
salt to taste

Preheat oven to 325\u00b0. Slice tomatoes in half crosswise. Place the tomatoes on a baking sheet, cut side up. Pour olive oil over tomatoes. Sprinkle with salt as desired. Bake for 2 hours, until tomatoes are wrinkled on the outside, but somewhat moist in the center. Serve warm or cool. Store in olive oil in the refrigerator. Spoon them over chicken breasts for a main course. They are great on omelettes; sprinkle with fresh thyme or basil leaves. Use in sandwiches, whatever. They are delicious!
