Chili Sauce - cooking recipe

Ingredients
    1 peck tomatoes, peeled and chopped or ground fine
    1 bunch celery, cut very fine
    12 medium onions, cut very fine
    1 c. kosher salt
    1 qt. vinegar
    1 Tbsp. black pepper
    5 c. sugar
    1 tsp. cloves
    1 tsp. allspice
    1 tsp. ginger
    1 tsp. cinnamon
    3 peppers (green and red combined; may use Durkee's dried pepper; grind peppers)
Preparation
    Combine finely ground tomatoes, celery, onions and salt; put in cheesecloth bag to drain overnight.
    Next morning, combine vinegar, sugar, pepper and spices together.
    Boil vinegar solution altogether for 10 minutes.
    Add tomatoes from cheesecloth; stir well and bring to rolling boil for 20 minutes.
    Pour into jars and seal.
