Fried Rice - cooking recipe

Ingredients
    2 c. cooked rice (1 day old)
    2 cloves garlic, crushed and chopped
    1 small onion, chopped
    1/3 c. carrots, cubed
    1/2 c. frozen peas
    1/2 c. tofu, cubed and lightly fried
    salt
    dark soy sauce
    2 dried Chinese mushrooms, soaked and diced (optional)
    dash of ground pepper
    2 Tbsp. cooking oil
Preparation
    Fry chopped onion in 1 tablespoon cooking oil until golden brown.
    Add frozen peas and carrots.
    Stir-fry until done.
    Add salt and ground pepper to taste.
    Remove from pan.
    Brown garlic in the remaining cooking oil.
    Add dried mushrooms, tofu, soy sauce and salt.
    Stir-fry for 1 minute.
    Add cooked rice and mixed vegetables.
    Mix and heat thoroughly.
    Serve hot.
