Sausage Jambalaya - cooking recipe

Ingredients
    3 lb. sausage, cut in small pieces
    1 Tbsp. shortening
    1/2 c. chopped bell pepper
    1/2 c. chopped celery
    4 c. water
    salt and pepper
    3 c. raw rice
    1 c. chopped onion
    1 c. chopped green onions
    2 Tbsp. tomato paste or 1/2 can tomato sauce
Preparation
    Heat shortening; add onions, celery, peppers, and tomato sauce. Cook over medium heat in uncovered pot until onions are wilted. Cover and cook 15 minutes. Add sausage and green onions; cook 30 minutes. Add rice and water; cover and simmer until rice is done.
