Sandy'S Spanish Rice - cooking recipe

Ingredients
    2 c. long grain white rice
    1 to 2 Tbsp. oil
    1/2 green pepper, diced
    1/2 Spanish onion, diced
    1 garlic clove, chopped
    2 cans tomato sauce (16 oz.)
    hot water or broth
    chili pepper
    cayenne
    cumin
Preparation
    Wash rice 2 to 3 times over running water, draining milky water as much as possible.
    Heat oil in skillet and add rice turning over with spatula as it turns whiter and then tan.
    Add vegetables and saute along with rice for about 4 to 5 minutes.
    Add tomato sauce and enough water or broth to cover rice.
    Bring to a boil then back down to simmer and cover but watch occasionally as you may need to add liquid.
    When rice has absorbed all broth and is cooked, serve.
