Coq Au Vin - cooking recipe

Ingredients
    4 slices bacon, cut in small pieces and fried crisp
    2 Tbsp. chopped onion
    1 (2 1/2 to 3 lb.) chicken, cut up (skinned chicken breasts are good), seared or partially fried
    8 small, whole onions (canned)
    1/2 c. coarsely chopped carrot
    1 clove garlic, minced
    2 Tbsp. brandy (optional)
    1 pt. fresh mushrooms, sliced
    2 Tbsp. flour
    3 to 4 sprigs parsley
    1 medium bay leaf
    1/4 tsp. dried thyme
    1 bunch celery with leaves, cut up
    2 c. red Burgundy
Preparation
    Combine all ingredients and bake at 350\u00b0 for 45 to 50 minutes. Good made ahead and refrigerated.
