Salade Nicoise - cooking recipe

Ingredients
    3 c. sliced, cooked new potatoes
    2 Tbsp. red wine vinegar
    2 tomatoes, cut into wedges
    12 anchovy fillets (optional)
    2 c. cooked cut green beans
    1/3 c. wine vinaigrette
    4 c. salad greens
    small, pitted ripe olives
    capers
Preparation
    Sprinkle potatoes with vinegar; let stand 1 hour.
    In another bowl, toss tomatoes and green beans with vinaigrette.
    Let stand 1 hour.
    Arrange salad greens on platter.
    Place potatoes in center; surround with tomatoes and green beans.
    Garnish with anchovies, capers and olives.
    Serves 4.
