Cashew Chicken Salad - cooking recipe

Ingredients
    2 c. cut up, cooked chicken or turkey
    1 c. sliced celery
    1 c. green grapes
    1/2 c. cashews
    1 c. mayonnaise
    1 Tbsp. lemon juice
    1/2 tsp. salt
    pepper to taste
Preparation
    Toss chicken with celery, grapes and cashews.
    Combine mayonnaise, lemon juice, salt and pepper.
    Fold into chicken mixture.
    Cover and refrigerate until chilled.
    Garnish with parsley and additional cashews.
    Toasted almonds may be used in place of cashews.
