Scallops A La Dorothy - cooking recipe

Ingredients
    1/4 c. chopped onion
    1/2 c. sliced mushrooms
    2 cloves garlic, minced
    2 Tbsp. margarine
    1/2 c. vermouth
    lemon pepper to taste
    1/4 tsp. thyme
    1 1/2 tsp. parsley
    1/4 tsp. salt
    8 oz. bay scallops
    2 Tbsp. Parmesan cheese
Preparation
    Saute onion, mushrooms and garlic in margarine in skillet over medium heat for 3 minutes or until onion is tender.
    Add wine, lemon pepper, thyme, parsley and salt; mix well.
    Bring to a simmer.
    Add scallops.
    Cook for 5 minutes, stirring frequently; do not overcook.
    Sprinkle with cheese.
    Serve over hot, cooked rice.
    Yield:
    2 servings.
